Necessary items for making thekua

  • Half cup semolina and half cup jaggery
  • 2 cups wheat flour
  • one teaspoon fennel
  • one tablespoon chopped almonds
  • one tablespoon chopped raisins
  • 2 tablespoons dry grated coconut
  • four ground green cardamoms
  • 1/4 cup desi ghee
  • Ghee or oil for frying

Jaggery helps the body maintain heat in cold weather. That’s why people like to add jaggery instead of sugar in thekua. If you want, you can also use sugar. To make Thekua, first of all you have to break the jaggery finely, add ¼ cup of water and cook till it dissolves. Keep stirring it occasionally, when the jaggery dissolves, turn off the gas and filter the water containing jaggery.

Now you have to add half a cup of semolina in the jaggery solution and mix it. After this you have to prepare the dough, for which add flour, fennel, almonds, raisins, coconut, cardamom and ghee in a vessel. Mix everything well, add jaggery-semolina solution to it and knead a hard dough for thekua.

If you want, you can also add some milk or water as per requirement. After kneading the dough, keep it covered for 10 minutes. After the stipulated time, take a ball of dough, knead it into a round shape and press it with your palm. Now you can make any design with the help of a fork or you can make thekua with the help of a mold also.

To make crispy thekua, the mixture must be perfect and the frying must also be done properly. After making thekua, heat oil or ghee in a pan for frying and keep the flame medium. Now add thekua to it and cook it on one side for one to two minutes and then turn it. These have to be fried on medium flame until they turn golden brown. Fry thekua using this process also. Apart from using them in Chhath Puja, you can also eat them by keeping them in a box and storing them for 15 days.
