How to prepare Malvani Masala-
Dry red chili – 40
Whole coriander – 1/4 cup
Cloves – 12-13
Black pepper – 2 tsp
Fennel seeds – 2 teaspoons
Cumin – 1/2 tsp
Shahi jeera – 3/4 tsp
Black cardamom – 2-3
Cinnamon – 5-6 pieces
Mustard seeds – 1/2 tsp
Asafoetida – 1/2 tsp
Nutmeg – 1
star anise – 1/2
Bay leaves – 2-3
Maharashtrian spice ‘Malvani Masala’ First of all take 1 teaspoon whole coriander, 1/2 teaspoon cumin seeds, 2 black cardamoms, 1/2 teaspoon mustard seeds and fry them on low flame for 5 minutes.
After this, take out these roasted spices in a separate bowl and keep them on the side.
Cook again in the same pan for 2 minutes till the spices turn brown.
Now add bay leaf and fry it separately.
Fry the remaining ingredients on a low flame for 3 minutes. After roasting, take them out separately in a bowl and keep them to cool for 5 minutes.
As the spices cool down, grind them in a mixer to make a powder.
Your delicious masala is ready. You can use it in vegetables.
