Make tomato sauce or ketchup at home without any preservative, Chef Pankaj tells 15 minute recipe


It is said that some things taste good only from the market, tomato sauce is also included in these. Be it French fries or potato chips or veg burger and pizza. Everyone’s taste is incomplete without tomato sauce. Be it making everyone’s favorite Chinese dish or eating pakodas during the rainy and winter seasons. Tomato sauce is used liberally everywhere.

Now if you say that it will look good only for the market, then perhaps you are wrong. Actually, you can easily make tomato sauce or ketchup at home without the help of any preservative. For this, Chef Pankaj Bhadauria has also shared a 15-minute recipe. So let’s try making tomato sauce to serve with snacks, starters or appetizers.

Material

  • one kilo tomato
  • 5-6 cloves
  • a cinnamon
  • a bay leaf
  • 1/2 chilli flakes
  • 1/2 bowl chopped onion
  • one tablespoon chopped ginger
  • one tablespoon chopped garlic
  • One tablespoon Kashmiri red chilli
  • a bowl of sugar
  • teaspoon of salt

First of all, cut the tomatoes and put them in the cooker. Now you have to make a bundle of spices. Take a cloth, add cloves, cinnamon, cheese flakes, bay leaves, onion-garlic and ginger along with red chilli and tie a knot in it. Now after putting this bundle in the cooker, you have to add one spoon salt and 1/4 cup water. You have to cook the tomatoes till 2 whistles.

When 2 whistles come, after opening the cooker, you have to take out the bundle and keep it aside. After mashing the tomatoes, strain them with the help of a sieve to separate the peel and seeds. Keep in mind that you should not grind it in a mixer, otherwise the color of your ketchup or sauce will change.

After filtering, you have to keep the tomatoes to ripen once again and put the bundle in it again. While cooking, press the bundle repeatedly so that the flavors of the spices mix well. During cooking for 5 to 6 minutes, you have to add half a bowl of sugar and 1/4 cup of water. Cook until it thickens and then turn off the gas and let it cool. Now fill it in a glass bottle and store it in the refrigerator.
