Diabetes is a big health problem in India and now a new research has revealed that the reasons behind it are things like cakes, chips, cookies, crackers, fried foods, mayonnaise, margarine and ultra-processed foods. These food items are rich in advanced glycation end products (AGEs). The results of this study were published in the International Journal of Food Sciences and Nutrition.

A 2023 study by the Madras Diabetes Research Foundation and the Indian Council of Medical Research (ICMR) revealed that 101 million people in India are living with diabetes and 136 million are in the pre-diabetes stage. The World Health Organization (WHO) had estimated the number of diabetes patients in India at 77 million.

This new study shows that food items rich in AGEs are the main reason behind India becoming the diabetes capital of the world. This first clinical trial was conducted by researchers from several institutions including ICMR and MDRF in Chennai.

AGEs are harmful compounds that form when proteins or lipids are glycated or modified by aldose sugars. Aldose sugars are carbohydrates that contain an aldehyde group (CHO). The study found that eating food rich in AGEs causes inflammation in the body. Inflammation is a major cause of diabetes.

The food items mentioned below are consumed daily. They are cooked in different ways and cooking them increases their AGE level. According to the study, the list of foods rich in AGEs includes-

  • Fried foods like chips, fried chicken, samosas, pakoras
  • Baked foods like cookies, cakes, crackers
  • Processed foods like ready-made meals, margarine, mayonnaise
  • Meats cooked at high temperatures, such as bacon, beef, and poultry, such as grilled or roasted meats
  • Roasted dry fruits like dry fruits, roasted walnuts and sunflower seeds

Researchers believe that eating foods low in AGEs can reduce the risk of diabetes. These foods include fruits, vegetables, whole grains, and low-fat milk.
