News of adulteration and counterfeiting of food items have become common in India. In order to earn more profit, traders openly flout the guidelines of the Food Safety and Standards Authority of India (FSSAI), the country’s largest organization that monitors the quality of food items.

The latest case is from Jaipur where officials have confiscated about 800 kg of fake cheese in a raid. This is not a new case. Recently, the FSSI team itself had confiscated around 500 kg of fake cheese in a raid in Uttarakhand. Consuming adulterated or fake food items can cause many serious health problems.

Eating fake or adulterated paneer can put you at risk of stomach problems, food poisoning, allergies, weakening of the immune system and even life-threatening diseases like cancer. Let’s understand how fake paneer is made, what are the disadvantages of eating it and how you can identify fake paneer.

How is adulterated cheese made?

Instead of real paneer, adulterated paneer is also sold in the market. It is also called synthetic paneer. It is very harmful for health. Many types of chemicals can be used to make it such as – urea, coal tar dye, detergent, sulfric acid. Sometimes refined wheat flour (maida) is also added to it instead of real milk. To make it, sodium bicarbonate i.e. baking soda is mixed in milk. Then palm oil or vegetable oil is added to this mixture. Finally, baking powder is added to this mixture and it is left to set in a vessel. It is sold as paneer only after setting.

Paneer is a popular dairy product all over the world, but sometimes adulterators add harmful substances to it to earn profits. This adulterated paneer is used to increase weight or to make it look good. Eating adulterated paneer can cause many health problems.

Starch or synthetic milk is often added to adulterated cheese, which can cause digestive problems. Harmful substances added to adulterated cheese can irritate the inner lining of the stomach. Eating impure cheese can cause frequent diarrhea. Eating adulterated cheese can cause problems like nausea and vomiting.

Dirty water and unhygienic methods are used in making adulterated paneer. This can lead to bacteria like E. coli and salmonella in paneer. These can cause the following symptoms – fever, severe stomach pain, dehydration etc.

Adulterants may include detergents and synthetic chemicals. These can cause allergic reactions, including symptoms such as skin rash, breathing problems, swelling of the lips, tongue and throat.

Adulterated paneer may contain things like urea or synthetic milk. These can damage the kidneys and cause serious problems in the long run – kidney pain, reduced urination and fluid retention in the body leading to swelling.

Regularly consuming adulterated items can weaken your immune system and increase your risk of getting sick. Some adulterators add chemicals like formaldehyde to paneer, which are carcinogenic. Consuming such items for a long time can increase the risk of cancer in the body.

How to identify adulterated Paneer?

FSSAI have told some easy methods for this. According to the first method, take a pan and boil paneer in it. Add a few drops of iodine tincture to the boiled paneer. If the colour of the paneer turns blue, then it is adulterated. If the colour of the paneer remains the same, then understand that it is real. Note: This test is effective only in detecting starch adulteration.

According to the second method, let the boiled paneer cool down in water. Add some tur dal in this water and keep it for 10 minutes. If the color of the water becomes light red, then the paneer may be adulterated. If the color of the water does not change, then you can use your paneer without hesitation. This test is effective only in detecting adulteration of color.

According to the third method, when you buy Paneer, first of all you can smell it (it should not be sour). If Paneer is being sold loose, then you can taste a piece of it. The taste of real Paneer should be milky and soft. If Paneer feels very hard or rubbery when chewed, then you should avoid buying it. Apart from these tests, you can also guess by looking at Paneer. The color of real Paneer is white or light yellow. There are no cracks in it and it feels soft and solid to touch.
